Rajasthani Kaddu Ka Halwa
Kaddu
ka halwa/Pumpkin Halwa is a simple and colorful treat made with the decency of
pumpkin, milk and enhanced with cardamom. The mix of cashews, melon seeds, and
raisins truly adds to the uniqueness of the formula.
Ingredients
- Kaddu - 1 kg
- Milk - 1 Liter
- Sugar - 750 Gram
- Ghee - 100 Gram
- Cardamom Powder – 1/4 tsp
- Mawa - 60 Gram
- Mewa - 100 Gram ( Cashew, Almonds, Kishmish, Pistachio )
Method of Making
- Peel and Chop Kaddu into small Cubes/Grated.
- Heat ghee in a heavy bottom pan.
- Once the ghee is hot, fry the almonds, cashew nuts and pistachios until they are slightly browned.
- Remove and keep aside.
- In the same ghee, add the grated kaddu.
- Cook on a medium flame for 10-12 minutes, stirring at regular intervals.
- Add milk and cook until all of it is absorbed by the pumpkin.
- Add sugar and cook for another 10-12 minutes.
- Add Mawa and cook for 10-12 minutes.
- Keep stirring at regular intervals throughout the process.
- Finally, add the cardamom powder and fried nuts.
- Serve Kaddu ka Halwa hot or warm.
