Masala Ratlami Sev

Masala sev is a very easy to make dry snack recipe. The Taste of this besan sev is spiced and the texture is crisp. Sev can be served as
tea time snack or made for Diwali as savory snacks.


Ingredients



Besan - One and a half cup
Salt - 1 Teaspoon
Red Chilly - One and a half Teaspoon
Turmeric - Half Teaspoon
Coarse Long - Half Teaspoon
Coarse Fennel - Half Teaspoon
Coarse Celery - Half Teaspoon
Asafetida - 1/4 Teaspoon
Oil - To Moyan and Fry


Method of Making



1.Take a bowl. Mix the flour, coarse long, celery, fennel, asafetida, red chili, turmeric, and salt.
2.Add two tablespoons of oil to the gram flour.
3.Add water and knead it a little harder.
4.Fill the seviya machine with a portion of it.
5.Heat the oil/ghee in a kadhai/deep-frying pan over moderate heat.
6.As soon as noodles fall, slowly move the machine in a circular motion so that they do not stick together.
7.Fry both sides until crisp and lightly browned.
8.Remove and drain on a paper towel.
9.Fry the remaining paste in the same manner.
10.Cool and break into uniform pieces.
11.Keep in an air tight container for 2 weeks. Your Masala Ratlami Sev is ready to serve
